Guiltless Chocolate Mousse & ButterlessScotch

Still chocolate wasted from Valentines day but craving a sweet treat anyways? Well, we’ve got you covered! Since it’s  National ‘I want butterscotch’ Day, we threw in one of our favourite butterscotch recipes with a twist – it’s vegan! The fact that it is butterless is absolutely BANANAS!

Chocolate Mousse (2)

Dark Chocolate Mousse with Banana Butterscotch, Whipped Coconut, and Salted Sesame

For The Mousse
200g Dark Chocolate (I used 95%)
400g silken tofu
1tbsp maple syrup
pinch of sea salt

In a food processor, whip the silken tofu. Pass through a sieve.
Melt the chocolate in a bain marie, and whisk into the tofu.
Season with sea salt and maple syrup. Chill for at least one hour.
In a stand mixer with the whisk attachment, whip the mousse until light and fluffy.
Transfer to desired serving dish and serve immediately, or allow to chill again for an even more decadent texture.

For the Banana Butterscotch
1 banana – slightly underripe
3 tbsp brown sugar
1 tbsp Whipped Coconut
pinch of sea salt and cinnamon

In a small saucepan, allow the brown sugar to melt down and start caramelizing.
Finely dice the Banana and add it to the caramel. Cook slightly to soften the banana.
Take it off the heat and finish with whipped coconut, vanilla, and salt. Allow to chill slightly.

Salted Sesame
Roast white and black sesame seeds until deeply toasted, and then toss with a generous sprinkle of salt.
Lightly grind in a  mortar and pestle until fragrant.

Whipped Coconut
1 Can of Organic Coconut Milk

Chill the coconut milk
Strain off all of the liquid, leaving you with the thick coconut cream that settles to the top.
Whisk the cream vigorously until stiff peaks form. Chill until ready to use.

To Assemble the Dessert

In your preferred serving glass, spoon a bit of the banana butterscotch in the bottom, followed by a layer the chocolate mousse. Add a dollop of the whipped coconut, and a generous sprinkle of the salted sesame. Tap the bottom of the glass to even out the coconut. Repeat the process once more. Top with another dollop of banana butterscotch, and a sprinkle of the salted sesame. Eat, and repeat.
